It would be great to be able to view a list of nodes, and view the total wordcount of all nodes in a term that the node belongs to.

Yup. I've been thinking about Wordcount 2.0 being just a Views plug-in. But v 1.0 will remain just a data table that sits in admin/reports. So I'm marking won't fix.

Is wordcount 2.0 in the plans or just hypothetical thus far?

There's a plan, but no timeline.
I'm still getting up to speed on the Views2 API -- and this module is, alas, not my highest priority.
