How do I upload the symbol for my website? The module that you would normally use to do such (Administer, Site Settings) does not give an option to do so on this theme. Any suggestions?

Not sure what you mean by "symbol", but to upload a new logo go to:
admin/build/themes/settings/genesis_darkmatter
You will see an upload form for the logo there. If not, well I don't know, never seen that before I'm afraid.
