After installation of the Kaltura module i was unable to see or change the default values of other content types. Once i deactivated the module I could see and edit the default values for fields created for new content types.

After turning Kaltura on and off i have discovered that the specific element in the Kaltura module which causes this effect is:

"kaltura as CCK field 5.x-1.3 provides 2 new CCK fields based on the kaltura nodes"

disabling this element returns the default values tab to the fields in question and allows one to edit and place default values.
