Wouldn't it be nice to have a report to show who is watching what?

I know one can go user by user and see what they are watching, but I'd like to see a report by node showing who is watching.

Good idea. It could be included on the Statistics page. I'll consider it.

Also, maybe the ability to put in a field like "please subscribe me to your newsletter" or whatnot.

#2: Not within the scope of Watcher. Not even related to the original poster's request. Consider one of the newsletter modules instead. Watcher handles notifications and tracking of posts, period. Sorry but I'm not going to make a Swiss army knife out of it.
