In my personal opinion, the best feature of all is how much easier it is to theme Drupal 6. Also while it's not a feature of Drupal 6 itself, the must-have version 2 of Views module is only available for Drupal 6 (Views and CCK modules are among the best and most important modules in building your Drupal site).

You should absolutely (with almost no exception) use Drupal 6, not Drupal 5. Drupal 6 has been out for well over a year, and so if modules have not yet been upgraded, they likely never will be (unless you do it yourself, pay to have it done, etc). Drupal 5 will no longer be supported once Drupal 7 is released early next year.
