How do I hide user profiles from the site search for anonymous users?
i.e. I want anon users to still be able to search content, but not the user profiles.

And speaking of search.... in administration when searching for a user to update etc....:

they don't have access, "access user profiles" is disabled for anon users....
though I do have the cck module with the user profile as content, and custom fields added... but if I look at any profile [as administrator] there is no option to change permissions!

This adds a layer of complexity I am not familar with.
If there is no way to disable this in administer -> permissions for the anon user role, I have no idea where to guide you. One thing to note is you state:
Ther permisisons would not be on the profiles, but in administer -> permissions.
If you've used a module that alter the way default profiles are handled, it may be best to file a support request against the module in question after looking through administer -> permissions thororughly. If a module is turning profiles into node or a content type, you would want to invesigate the entire administer -> permissions area.

right I checked administer -> permissions -> user module and the anon user has no access to "view profiles"
looking at any other [almost any] content type, book, page for example, you have a view/edit permissions on the article itself,
for the "user profile" content type there is not such control, only at the "manage content types level"
BIT OF AN UPDATE:
CCK is providing the content types and custom fields, under admin -> modules -> CCK -> content permissions needs to be enabled for starters
now an anonymous search hides all the custom fields [great] but still displays user names[only] as search results. [not great]
profiles
there is the option in the content type "profile A user profile built as content." to change "node privacy by role" but if I remove all permissions from anaon users & rebuild permissions .... still nothing - anon users still show up in the search. [argh!]
