I put my site in "Maintenance Mode", then to see how it looks as a non-authenticated user I logged out, and now it doesn't have the login prompt for me to get back in....

I know this is a dummy question, but I'm so stuck..

Just go directly to the user login page. /?q=user

This needs to be stated somewhere more accessible -- or when you click logout during offline mode and are an admin -- you should get a page that says this
