I noticed, when I delete a product, wich stock level is active and has a value,
database entry remains in uc_product_stock table...

This is correct, as we cannot assume in Ubercart 2.x that the node being deleted is the only instance of a SKU in the product catalog. It's unfortunate, but this issue must be postponed until we re-address the relationship between products and nodes.
