right at the end of the profile installation there is a screen that talks about
"tick to install image handling, thickbox and shipping modules out the box!" > I did a filesearch and realised that they werent yet downloaded so made sure i installed 'token', 'views', 'thickbox', imagefield, imagecache and 'cck' before finishing.

Despite this when I checked the create product no image field was there and also the relevant modules were yet to be enabled. Did I do something wrong or is it a future feature?

Actually, this looks like a bug that's addressed in #505626: Get it working again!.
