Show overview page of galleries?

Using this to create a photo gallery. I can see thumbs from images of the gallery in teasers as shown in the tutorial

But not sure how to make a grid view of all galleries displaying a thumbnail on the latest image in each gallery? Seems like it should be simple but there's a few of us scrathing our heads as seen in the comments in the above link.
