What I really want to be able to do is to choose which new content is premium, but have everything become premium after 2 weeks. Right now if I set stories to become premium after 2 weeks, I can't set any new content to premium right now.
I know that may be weird, but I'm trying to offer selected new content as premium, and have all of my archives become premium automatically.

miklThat is currently not supported, but you could easily accomplish this yourself with a glue module inserting the right data in the premium tables.
