I want to set up a user type who can add just one type of content. Really basic, I don't want them to be able to access or change the 'input format' field on the add content page.

Anyone know how I switch this off? I can't find it in permissions.

go to content and edit content to the type you want.......

when users post that content they will not have the option selecting input format..........

Under filters you can use roles to limit which ones are available.

I probably haven't understood.

I've been into Content Types> Manage Fields, it's not there.
Content Types> Display Fields, it's not there.
I can't see how 'filters' would work, and to be honest the only filter I'm aware of is within Views which can't be right.

Can I have a click-by-click?

You'll want to configure the input filters (admin/settings/filters) so only certain roles can use certain filters.
