I see CAS Version 1.0 and 2.0 listed in the configuration options. I need to know if this will work with CAS server version 3.x (3.3.2) on a Drupal 5 site?

Yes. There weren't any significant protocol changes between 2 and 3. I've been meaning to change that to say 2.0 or higher.
