I'm trying to get my head around this .. any suggestions on how to do this, would be most appreciated :)

What I would like is a user to create a content type 'project' and as example call it 'my_project'.

Would it be possible that other users are able to upload images, files and text and then associate them to 'my_project'? Yet at the same time not able to edit other information on 'my_project', just their own that they have added.

I'm looking at node_reference, but that's not going to do it I think. Selecting a node reference from hundreds of 'projects' in the drop-down will be very confusing.

Simply put, on 'my_project' there is a link that will direct users to other content types where they can upload their images, files, etc ... then automatically attaches to 'my_project' appearing as views in associated tabs.

So the tab layout would be as follows: 'My Project' | Images | Files | Video

You can probably do this nicely with the http://drupal.org/project/nodereference_url and http://drupal.org/project/views_attach modules -- very similar to the way the gallery functions as described at http://www.lullabot.com/articles/photo-galleries-views-attach
