Missing Fields in Setup

Description
I have installed ecommerce and all other modules it depends on. When I go to the "store" screen to setup my store, I don't have all the necessary fields/options required. I have the same problem with the accompanying paypal module. I've attached screenshots. Ideas?

The store config is correct, I am not sure what other settings you are looking for.
As for the PayPal configuration I don't know where that page came from as it is not from the ec_paypal module. The configuration for paypal is under the receipts page. You just need to drill down on the settings and there is a tab for the settings.
I have attached an image of what it looks like.
