Instead of receiving the typical user registration confirmation email after registering on my site and leaving the newsletter list unchecked, they receive an email from MailChimp telling them they have been unsubscribed from the list.

The module does not impact the outgoing Drupal registration emails, you control those in the user settings. Likewise, you control within MailChimp the emails that it sends out. Now the fact that users are unsubscribed from a list when registering is a potential problem. Provide some more details about the situation and I can look into it. E.g., does your existing MC list already have members in it that are then registering on the Drupal site.
