When I Edit a product and select the related products in "Related Products for Upsell: " then save the selection it does not show my selection when I come back to the edit tab. I found this in the released version also.

I am also experiencing this (running D6.13, UberCart 6.x-2.0-rc6 and Upsell 6.x-1.15).

1)The saved selection does not show up when I come back to the edit page
2) The "related items" column at /admin/store/products/upsell/ is blank.

Any ideas?

I had this problem in the past, it was resolved in dev. see Related product associations are not made.

Yeah 1.15 is somewhat old, please try the latest dev and let me know if it solves your issue. It has a couple other bugfixes and solves an issue with the "one to one" reciprocal associations.

issue is resolved and latest dev 2009-Aug-26 for me. I believe there was another resolved issue too wil post in that one.
