I'm getting watchdog errors telling me: Message could not be delivered for method simple
This started happening after I disabled the simple messaging module - but I made sure that the messaging method was not in use.

I am also using notifications module and it is possible that users may have selected simple method in their notifications preferences. Could this be what is causing the errors?

It looks like this was due to queued messages. Although I had reset everything to use mime mail it appears that queued messages methods cannot be changed. I deleted the queue and watchdog errors have gone. Although a few users will have lost some notifications in the process.

It's a shame method cannot be changed on queued messages - but I suppose this is probably a notification issue?

Looks like you have some left over subscription 'simple' method. Review your tables in the db
