I created a service with no title and gave a start date of April 26, 2009. I got this message:
"Service Service for April 25, 2009 has been created"
I verified that the service content item created has a title "Service for April 25", not April 26.

This sounds like a time zone issue, although the time zone conversion should be off for that field. Do you have a time zone specified for your site, and what is it?
