I seem only to be able to add state / provience field by using the Id number eg. 44 = Guangdong is this correct or have I set this up wrong? Why cant I just type the provience name.

vmpwraith, the Addresses module has quite a few quirks about it at this point. One of which being that you must enter the abbreviation for the State/Province. A new patch is in the works which provides a drop down list which will fix this issue #244471: State Field Option List.
