can i simply update from version 1.0 to 1.2 by copying the files and running update.php or do i have to take care about new cck-defs too? what would be the best practice method of updating this module?

You should be able to just copy over the code, no database or CCK changes were made during the 1.0 to 1.2 updates for the module.
