I was trying to create my first web content and I had chose page to create an about me.

I chose page because the content will be static.

Once I finished the page and I tried to publish it, it was published as a post and I don't know why.

Any help is appreciated.

Are you referring the fact it was published to the front page or do you mean something else by "post"?

When you create/edit the content you can change if it posts on the front page.

For each content type you can also set if it posts to the front page by default (or not).

When I create a page once I published it state at the top of the page " posted on Date - Time" can I control where is the date show top or bottom of the page can I replace posted by updated on.

Can I remove "posted on"

You can remove post info at admin/build/themes/settings/global. To customize it you can theme it in the node.tpl.php file or try the http://drupal.org/project/submitted_by module.
