Currently the titles of cells or labels cannot store long strings. This is usefull when matrix field is used for exposing survey like items, e.g. each row is a sentence having a checkbox to record agreement. My suggestion is to either rework label forms to support long strings, or to implement an additional description textarea for a cell or row.

Steel Rat commentedI would prefer being able to define each column (field) specifically, where I can set the title, the display size of the field, max size, etc.
I'm trying to make a CCK content type that will let my office make parts orders. It's pretty cumbersome to have all the columns the same size. Typically a purchase order booklet has a small field for quantity, a larger field for parts description, then a smaller field for price.
