I've installed (and used) the imagefield module but after going to "Permissions", there's no options for imagefield, it doesn't even appear.

Any help would be greatly appreciated.

There are no permissions for ImageField. If you want to allow access to only certain fields, you need to enable the Content Permissions module (it comes with CCK) and set up permissions for ALL the fields on your site.
