Translation advice - better to hire translators who use drupal to edit content, or is there another way?

This isn't so much a technical Drupal question, but more of a procedural question.
We'd like to add french content to our site and have generated all the french pages. We're at the point where the actual content on the page needs to be translated. I'm wondering what is considered common/best practice... do people hire translators who will log in to drupal and translate page content with the Edit form, or is there another way to provide a translator with the content?
If a translator is going to login to my site, is there any easy way to give them access only to french content? I do not want them to create, edit or delete content in any other language.

I'm not sure what the best practice is for this. You can control what certain users can do on your site but I don't think you can limit them to only edit french content.
You could try creating a new user role "french translator" and then give the translator this role.
Then set the permissions for the role so that they can only edit their own content and then set the owner of all your french pages to this user.
We have a module, http://drupal.org/projects/icanlocalize, that makes managing this sort of thing easy. The content is sent of for translation user our service at http://www.icanlocalize.com and the translations are then returned automatically to your website. The translators don't need any access to your website. But I don't think this will help you if you are using Drupal 5.x
