I'd like to replace the version of simpleview that comes with flash gallery with the paid version - in order to get rid of the product tag that appears in the bottom right-hand corner of the gallery. Do you think there will be any problems with this? and would it be a matter of just uploading the new .swf file?

There shouldn't be a problem by updating the swf file. Unless in there new version the XML schema has changed.
But I believe it will work fine.
If you do replace it and it works, let us know if you had any issues.
