I whipped one up after the latest release, this is a vanilla UberDrupal install with recommended Ubercart modules, and Fusion/Skinr: http://uberdrupal.dev3.webenabled.net/

If it helps anyone else save a few minutes, here's the Drush command used to download all the recommended stuff: drush dl admin_menu skinr fusion acquia_prosper token cck filefield imageapi imagecache imagefield lightbox2 ubercart uberdrupal

I'd be up for setting this up as an administrative demo as well, using the Demo module, but I'll need to take a closer look at the ideal permissions for this. The neat thing about this WebEnabled site too is that you can set up a public URL for others to clone the site to their own (free, for basic accounts) WebEnabled account.
