I was not knowing first this module and I started this site www.forniture-alberghiere.net and others using the text field instead of phone field. It is possible in some way to export these text fields and import them into phone field? If yes, how?

You can use 6.x.1.0 rc5 version of Node Import module to perform such operation

This has been documented in the Phone module readme.txt file
