Reports

I would like find/create etc a report that would take from say 'item number one' from all orders or all completed orders and give a tally of 'item number one'. The reason I would like to have this is for orders that will be brought in as special, or how many to put on our truck for delivery. Is there a way to build something like this or is there a module that would meet that need?
