We're about to launch a site where we expect a hyperbolic increase in registered users from 0 to 100 million in 18 months.

We need a CMS that can grow as we grow, or which can be 'easily' replaced as our registered user number increases.

At first, we'll only have five pages that include Flash and a My Account page with a contact form. But over the first six months, we'll also add a newsletter facility, blog, contact forms, groups and forum. At some point, we'll be migrating from shared server to dedicated servers, etc.

This may sound a bit hokey, but we'll increase facilities in response to demand. This way, we can maintain site ownership.

Could anyone please advise us on whether Drupal would be a good starting place?

I have read something about LAMP but am not a coder and have no idea what this means.

There is no 1 answer to your question.
You have to consider many things for achieving this.
Have a look at cloudhosting, or more specific http://www.getpantheon.com/
This is a drupal distribution for the cloud.
But if you're total new to all this stuff, i strongly advice to get professional help for finetuning everything.
