I am wondering if I have missed something...

...I have been able to use Content_access AFTER saving new content, by editing the node and fiddling with the permission boxes, but is there a way to select which roles can view, edit and delete the node PRIOR to publishing it?

I am wanting to apply this feature to 2 particular node types in case it helps in your explanation.

Go to the Access tab of the node type.
