How would I restrict the search results to list titles only - not a mix of titles and "all the info a node has to offer"? At present, my newly-created page will list Product title A, Product title B, Product title C - and then everything (title, article text, etc) for relevant articles. It seems split by content types.

I'm not sure I understand what you are looking for, but you can probably use the faceted search module and select the only "Title" field in configuration.
