My apologies if this has already been addressed but I look through the issues and was not able to find the same issue.

I am using APK to set up user profiles. I also have the following related Node Profile modules enabled:

Node Family 5.x-1.3
Node Profile 5.x-1.4
Node Profile Helper 5.x-1.0-alpha4
Usernode 5.x-1.3

Under admin/settings/advanced-profile I added an edit tab for User Profile. Now when a user goes to his account and clicks edit there are three tabs: User Profile, Account Settings & User Info (custom Profile category I created).

How do I remove the User Profile tab under edits? I thought I could do this by going back to admin/settings/advanced-profile and resetting to defaults but this does nothing.

I really don't remember. I haven't looked at the 5.x version in a very long time. I think there were checkboxes in the settings but I'm not positive. You might want to try the forums to see if anyone is still using 5.x.
