I need some help configuring and/or customizing the Webform module.

When the form is submitted, it is emailed to me and a hidden address I have set up gets a BCC of the message. How can I change this so the message is a CC and not BCC? I have a very specific application where I need my address, the user address, and the cc address to all be displayed.

Where did you set it up to be a BCC?
