I've got several developmental drupal installations on my server.
All are passworded using htaccess, so no-one visits them except me.

My question is: are they still 'loaded' and taking up memory on my server all the time?
Or are they only loaded into memory when someone visits the site?

Depending on your Apache/webserver is configured, they take up some memory all the time. However, when number of visitors increases, total memory consumption will increase further.
