I've searched everywhere and I can't find an answer to this so please excuse me if this has been discussed here before (which I assume it has been). How do I hide from users all those options when they create content?

Most of the options are controlled by permissions and only available to general users if you grant them permissions.

You might also want to look at Node and Comments Form Settings.

This is embarrasing. Just after posting I kept searching and found that the formfilter module does just what I need.
