Is it possible to associate a view with a subsite? I am using Subsites to segment my site into different sections (it works really well, by the way), but I can find no mechanism to say this one view should be attached to this one theme that is connected to this one subsite.

Yes, you can do this by adding the path of the view to the subsite.
