I am happy with the standard Page and Story content types.
Still I need more control over the access control.
I would like to write my own access control.
I like the concept of the hook_access() for controlling access to the content types you build your self.
Do I have a hook_access() available when I am using the standard content types Page or Story?
Actually I don't mind building a content type but the ONLY reason should be to control the hook_access(). How much code does that take? Does anyone have an example?
I have looked a several access control modules. Right now I am following the idea of writing my own hook_access()
Any input would be appreciated.

There is very likely a module
There is very likely a module out there that will already do what you want. Why don't you explain it a little and maybe someone can help point you at a module that does what you want.
