Is it currently possible to require information during the Ubercart checkout process that will fill a field in Content Profile upon completion of the checkout? I would really appreciate any pointers in allowing this. Thank you!

No, this currently is not possible. I believe it requires rules integration which does not exist. The only method I know of is to redirect to the user registration page and set the destination back to the checkout page by using the pane hooks. Clunky and not really very clean.

UC Profile module does this for the regular profile fields. Not sure if that helps...
