Would it be too difficult to add one more option to the "My Notify Settings" screen?

Category.

To be able to select from a list of known categories of content would be great. Then you could really fine tune the notifications to the content your're really interested in.

For example, there would be a pulldown menu of all known categories, sorted by content types, i.e.:

articles: general
articles: news
blog: mood
event: dance
event: music

and so on...

You could select the categories you wish, and only content types tagged with those categories would be sent.

I resolved this issue -- by using the Subscriptions module which is specifically designed to do this.

Sorry to open back up, but I would like to have a notify selection for certain fields in a cck page. With the subscription mod, it only allows content types, not fields.

Perhaps that will meet your needs when it is implemented? I, for one, would like the ability to only notify about certain node types (stories, but not events).
