Sorry if this is not the way things work, but it seems like the language selection for editor profiles should be based on the enabled languages on the site instead of a hard-coded list. Also, the default is always 'en' when the default language of a site could be something different.

This also gives languages 'nice names' instead of people having to know the languages ISO code.

Thanks for taking the time to report this issue.

However, marking as duplicate of #362318: Limit wysiwyg language selection to available languages. That is, because the available languages are actually dependent on whether the editor library supports a language or not. Most often, additional "language packs" can be installed for an editor library.

You can follow up on that issue to track its status instead. If any information from this issue is missing in the other issue, please make sure you provide it over there.

Huh? Where did my reply to this go? I basically said what sun said, with the addition that some editors require all their plugin to support the chosen language as well, and if they don't they just crash. Relying only on Drupal's default and available languages would essentially break the module for every non-english installation if language packs were not available.
