I have a content type of "Portfolio Item". Each one shows a title, description, link, and a bunch of images. That's all great. I want to create a view page that has the name of the portfolio site (which links to the page), and a link to the external portfolio item.
I can't see to do this at all with views or Taxonomy, is this even possible?

Add the simple views module, it can help you create a view for any content type.
