I simply enabled the guestbook module and customized things in the site configuration area.

Q1. I set the "email to" field to my email, but i don't get any email when a user adds an entry in the site guestbook. Why?
Q2. No emails get sent when users add a guestbook entry in user guestbooks. What could be wrong? How can i fix it?
Q3. How can i set the email content that gets sent to users when someone adds a guestbook entry in their guestbook?

Sorry, but I'm unable to reproduce this issue. Since you didn't provide any further details, such as log messages or similar, no one else was able to help out either.
