Hello -
I am on MediaTemple's grid service plan - they provide a stopgap domain permanent URL (http://userid.gridserver.com) for your sites (not associated with your .com's DNS).
I would like to install, develop, theme etc everything on this url before linking my .com to the site.
Should my drupal install switch over seamlessly when I start to access it from the .com if i have installed it from the stop gap domain?
Thanks - I assume drupal uses all relative linking so I hope that this should be no problem at all?

This is generally the case, yes. Should be no problem. Just be sure not to code any absolute references yourself. :)
