I installed the 'Full' version of Gallery2 and there are a ton of modules, including a comments module and a host of e-commerce modules.

I understand 'ImageBlock' and 'ImageFrame' are required, but it would be good to know what others can be safely uninstalled.

As far as I know all the rest of them can be uninstalled if you're not using them. Just make sure you keep either GD, NetBPM, or Imagemagick. If not you won't be able to add more photos.
