All you need to do is change the package line in the .info file.
Note that some UI modules use the package name "User Interface" and others use "User interface" (lowercase "i"). Since the Modules page is case-sensitive, these will appear as two separate categories. According to Quicksketch, package names should only include the first letter capitalized. So "User Interface" is incorrect, it should be "User interface". See http://drupal.org/node/227687
