I am configuring a server setup specifically for shared hosting of Drupal sites. Just wanted to get some input of what you all think is needed or wanted in your servers?

At least make you sure you
At least make you sure you have ample memory limits and PHP timeout limits. I've tested installing drupal on numerous of servers and once you go wild on modules in your install, most servers just can't keep up due to silly resource limits.
So I'd say
memory_limit: 96MB
max_execution_timeout: 120 sec
Furthermore you probably want ACP installed, uploadprogress and allow drupal to check for updates.
