At the moment to remove a file first user needs to click remove and then start again.

Coppermine has a nice option of displaying both the remove, and a replace option right away with the file field to specify the location.

Not essential, but a nice way to handle workflows :)

This won't be added to FileField because it has been moved to Drupal 7 core, basically exactly the way it behaves now. We're after feature-freeze for Drupal 7, so what we have now will likely be the way things are until Drupal 8 (or you can look into creating an add-on module to provide this functionality).
