I have enabled the module, setup one of my profile fields to be restricted, edited the permissions so that "admin" can edit and all can view. But when I log in as a "authenticated", I am still able to edit the fields even though "authenticated" user should not have the ability to edit that field as defined in permissions.

The profile field is a date field. I have the following modules enabled:

Content Access
Admin menu
Ajax
Content
Database logging
Menu
Path
Profile
Statistics
Update Status
Image API
ImageCache
Alternate Login
Login security
LoginToboggan
Nice Menus
One page profile
Pathauto
Token
Profile permission
Profile role
Captcha
Google Analytics
Wysiwyg
Views

Is it possible that Profile Role or another module is causing the issue?

I'm having the same issue. I cannot get either this or profile role to work! I 'm using Content Profile with CP fields (as opposed to a CP node type). I have removed profile role, flushed everything. No joy. Presumable some people have got this working? I'm using Drupal 6.15.

Still no luck on getting this to work. I have no idea what the issue is. I would really like to make the field to be editable only by admin. Any help?!

Please check if the patch in #772570: One Page Profile module incompatibility fixes your problem, and report the results.
