Refered to #692558: how to tell CKEditor not to convert French accents to HTML entities we can now use in "Custom javascript configuration"
CKEDITOR.config.entities = false;
CKEDITOR.config.entities_latin = false;

But I think this would be an option in the admin for each profile.
And why by default we convert special caractere?
